As a passionate life-long Horticulturist, Paul Gellatly is a co-founder of the Newest Rare and Unusual Tropical Plant Boutique “The Botanical Collection” opening in 2022. Paul is the Regional Director of Horticulture for BC Rare Tropical Plants. He is an avid collector of rare & unusual plants with a personal collection of over 800 tropical plants.
Paul has affiliations with the Toronto Botanical Gardens as the Former Director of Horticulture & The Toronto Zoo as a former Curatorial Gardener managing one of Canada’s largest Tropical Plant Collections. Paul entered Horticulture as a Profession 9 years ago with a life-long passion for gardening. Paul started Part-time at Plant World & then accepted a position as Gardener/Grower for the City of Toronto.

Fermentation and preserving allow us humans to live according to nature’s cycles. Learn about local food resilience by bringing your garden into your home for the winter. This workshop will be an overview of the many traditional and modern ways of preserving your harvest.
Meet the facilitator
Brianne Vaillancourt is involved in permaculture and organic food production; emotional
intelligence training and conscious community-building; spiritual practice and Whole Yoga. Brianne is an experienced Yoga Teacher since 2015, and a certified Permaculture Design Facilitator since 2017. She currently works as a consultant for a community farm in British Columbia.
